We’ve had a busy Summer, and the way it looks we’ll have a busy fall. In the last two weeks we dug most of our potatoes and canned a lot of fruit.
It takes several days to do our potatoes, as once they are dug we like to let them dry. Then we brush and sort them. Every potato gets brushed – we had seven brushes going. :) In the meantime all the stabbed and small ones get sorted away from the ones we store. Then we throw them into our wash machine to wash them before cutting them up and canning them. Marie and I spent one whole day cutting up potatoes and canning them – 74 quarts and 59 pints. The rest are put in our root cellar (over 12 bushels) where they keep well until used. Ours from last year kept for close to a year (approx). We feel very fortunate and blessed.
We canned 69 quarts and 24 pints pears; 60 quarts and 24 pints fruit cocktail; 38 quarts and 12 pints pizza soup and 4 quarts and 12 pints vegetable soup. We still have applesauce and grapes to can. The grapes we usually can juice, pie filling, and wine.
Another thing we like to do every year is to take the workers on a trip. For several years we didn’t do much more than let them float down the river. It was fun for them so why do we want to complain and think it wasn’t enough? This year we took them to the Cleveland Air Show. We really enjoyed it, but due to the weather conditions we didn’t get to see the Thunderbirds perform. We were a little disappointed but also understand it was for the safety of everyone.
