Amish Originals Furniture Co.: Miriam's Journal September 30, 2009







Dear Journal,

As I stated in the last entry, our weddings take all day. Different Amish settlements do things a little differently.

In our area, we ask approximately 26 women to help cook the meal and 28 girls (called table waiters) to help serve the meal. They also help five days prior to the wedding day. We split them up so we have four or five women and girls each day. The things we do include baking pies, bread, jelly rolls, mixing dressings and sauces etc. We do everything we can beforehand so we can visit with the friends and relatives from far away on the wedding day.

The day starts early with women arriving at 6:00 a.m. to fry chicken. We have six large frying pans going at the same time. The chicken is then put into roasters to put in ovens to finish baking.

We have six to eight women peeling potatoes for 13 six-quart kettles of mashed potatoes. Two women make chicken gravy – two 12-quart kettles, four women make dressing or stuffing – four 13-quart bowls full. We make ours from scratch (it doesn’t come in a box). We then fry it in the pans that were used for frying chicken. The mashed potatoes and dressing is then put into large stockpots and placed in a large tub of hot water to keep warm until served.

We have two women responsible for the coffee. We use large 101 cup coffee makers and make 3 pots for the noon meal and two pots for the evening. The girls cut 25 heads of lettuce, chop cauliflower, and slice radishes for the salad and fix it in the serving bowls. They also mix the fruit for 25 pans of fruit pizza, slice 25 small loaves of fresh homemade bread, 22 jelly rolls, and cut 32 pies. We have three different pies, choice of the bride. Marie chose pineapple, peanut butter, and coconut oatmeal.

The evening meal we will make noodles, baked beans, meatloaf and dressing (if there is any left from lunch). For dessert we will have pie, homemade ice cream, and strawberries.

Next time, we’ll talk about the corner where the wedding party, which consists of the bride, groom, and two sets of witnesses, sits. We call “the Eck.” This is the most special place in all the room.
